Valentine’s Day Cookie Pops

Hi, I’m Damaris Palmer from Kitchen Corners and I’m thrilled to be guest posting today on FarFaria. My two oldest kids, Enzo (6) and Maria (3) are super fans of FarFaria. Recently we’ve been enjoying some heartwarming stories like the “Cupid’s Royal Mission.”
We {heart} Valentine’s Day in our family. My husband and I met at a Valentine’s Day party, so every year we look forward to this special day. We try to make the holiday fun in our home by having the kids make something delicious for their friends and teachers, like heart shaped sugar cookies.
However, we like to take the traditional sugar cookie to a new level.

Kids are thrilled about lollipops, and making a sugar cookie version is a perfect treat for Valentine’s Day.
Valentine’s Day Cookie Pops
(makes 30)
- 1 cup sugar
- 1 cup butter (at room temperature)
- 1 egg
- 1 Tablespoon orange extract
- 3 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Frosting and sprinkles of your choice
- 30 lollipop sticks

In a large mixing bowl cream the sugar and butter for 1 minute in high speed. Add the egg and orange extract and mix until well incorporated. In another bowl, whisk together the flour, baking soda, and salt. Then add the flour mixture to the creamed butter and mix until well incorporated. Let the dough chill overnight.

When you’re ready to the start baking, preheat the oven to 350 degrees..

Roll out the dough in small batches. Make sure that it’s at least 1/4 inch thick. Cut with your favorite small heart shaped cookie cutter.

Carefully put the lollipop sticks in the middle of each cookie. Then press it down just a bit so that it sticks. Then layer another cookie on top so as to hold the lollipop stick in place, and gently press the two cookies together. When it bakes it will merge into one cookie.

Bake for 12-15 minutes, until golden brown around the edges.

Let the cookies cool completely before frosting and decorating.
